In fact, sales of refrigerated liquid vegan eggs grew 21.4% and represented a market value of $34 million, according to data analyzed by SPINS for the Conventional and Natural Enhanced Channels (natural, organic and specialty retailers) for the 52 weeks ending June 10.
One way consumers find new products featuring vegan eggs is through partnerships with both plant-based and animal-based protein brands. JUST Egg's partnerships with Field Roast, Crepini and Mikey's are three examples of vegan breakfast items' expanded reach.
Other breakfast trends capturing consumers' attention are frozen vegan breakfast entrees and plant-based breakfast links, sales of which grew 28.1% and 17.6%, respectively, according to the SPINS analysis.
In addition to vegan egg substitutes and plant-based proteins, consumers are finding a range of beans and seeds, which offer excellent nutritional profiles and are quite sustainable, among the ingredients in convenient breakfast foods.
