ReThink makes all-natural ice cream that is low sugar, lactose free and gluten free. Instead of sugar or sugar alcohol, it's sweetened with organic agave nectar and a small amount of natural stevia extract. ReThink's ingredients are directly related to its founder's alcohol addiction. Early in his recovery, George Haymaker was eating "way too much ice cream" and realized he was substituting it for the sugar in alcohol. Because he valued taste and texture, he developed his own healthy ice cream.
Sun Noodle emerged from a Hawaiian man's passion for fresh noodles and a desire to share that enthusiasm. He began taking special requests from chefs and learned to make noodles that weren't traditional to Japan, such as soba, chow mein and saimin. Sun Noodles expanded to California in 2004, New Jersey in 2011 and New York in 2012, delivering fresh noodles to restaurants around the world. Online, the company offers ramen kits that include noodles and broth, to be cooked at home.
Omni Foods has long offered plant-based pork products—ground, strips (like bacon) and luncheon—in Asia, and the foods debuted in American restaurants in April 2021 and in retailers the following August. Now, it is offering plant-based fish fillets, both battered and unbattered. A team of Canadian scientists created the plant-based pork products to tackle climate change and food insecurity. The products, which are frozen, are certified vegan, Non-GMO Project Verified and contain omega-3s.
The Matzo Project started when two longtime friends began a quest for a better-tasting matzo and created matzo flat crackers and chips. The recipe includes sea salt and sunflower oil; both are available in salted and "everything" flavors, while the chips also are available in cinnamon-sugar. For a real meal, consumers must reach for the Matzo Ball Soup mix—complete with the company's illustration of a Jewish grandmother, sitting on the rim of a bowl, saying, "Good. Not as good as mine. But good."

Consumers' pantries look far different than those of their parents.
A variety of shelf-stable products represent Americans' heritages and preferred diets. At the same time, consumers are interested in the stories behind the brands: What inspired their creation and what values do they embody?
Two trends compel the creation of the Modern Pantry macro force:
Storytelling—Brands take advantage of technology such as social media to communicate with consumers and share their missions.
Diversifying America—The fabric of American has evolved to include people who don't push themselves into long-held social norms. Brands are extending their reach toward people of different gender identities, sexual orientations, family dynamics and skin color.
